Is it possible to have a default "Assign To"?
I'd like all bugs submitted by anyone to be assigned to me. Possible?

Not straight as you requested, no.
What you could do, though, is add yourself as the assignee for all of your categories.
Go in to your project management page then look at the categories. If there is a value for the 'assign to' column, then any issue reported with that particular category will be automatically assigned to that particular person.
